Custom formulations, made to your spec

If the product your menu needs does not exist yet, we will develop it — your marinade, your breading, your portion, produced under USDA inspection and sold only to you.

What custom actually means here

Most processors will call a changed seasoning level “custom.” We mean something more specific: a formulation developed against your requirements and produced exclusively for you. Many of our longest-standing partners have items that appear in no catalog, ours included.

That covers the marinade, the breading or batter, the cut and trim spec, the portion weight, and how the product is packed — because a 1.75 oz strip in a 2/5 lb bag behaves very differently on a line than the same strip IQF layered.

What we can change

How the process runs

1. Specification

Tell us what the product needs to do on your line — the flavour target, the cook method, the portion, the price point. Bringing a sample of what you make in-house today is the fastest starting point.

2. Sample run

We produce a trial batch. First-time customers get sample orders with no minimum, so trialling a formulation does not require committing to a production run.

3. Revision

Adjust and re-run until the product is right. This is the part that benefits from talking directly to the plant rather than through a broker.

4. Production

Once approved, the item gets a code and enters normal production, ordered through your distributor or direct.

Who this is for

Multi-unit operators

Consistency across locations is the usual driver. A fixed formulation removes unit-to-unit variance in prep.

Signature items

A dish that defines your menu, produced to the same spec every week without tying up skilled labour.

Labour-constrained kitchens

Moving trimming, portioning and marinating out of the kitchen recovers hours per day.

Brands needing a co-packer

USDA-inspected production capacity for a product you have developed but cannot manufacture.

Common questions

Can you create custom products for our menu?

Yes — that is a core part of what we do. We will develop proprietary products to your exact specification, from unique marinades to special breading recipes.

What is the minimum order?

It varies by product, and we work with restaurants of all sizes. For first-time customers we offer sample orders with no minimum so you can trial the product risk-free.

Is the formulation exclusive to us?

Custom formulations are developed for a specific operator and produced for them. Talk to us about exclusivity terms for your programme.

Bring us something to match

Send us the item you are prepping in-house today and we will quote a formulation against it.
