Three generations of the O'Steen family, one Oklahoma plant

Since 1989 we have made one thing our specialty: taking prep work out of the restaurant kitchen and doing it properly, under USDA inspection, before it ever reaches your walk-in.

How we started

O'Steen Meat Specialties was founded in 1989 by Jim, June and Rick O'Steen. The idea was narrow and specific: restaurants were spending hours every day trimming, portioning and marinating proteins in-house, and doing it inconsistently. A properly equipped processor could do that work under inspection, to an exact spec, and deliver it ready to cook.

That premise has not changed in thirty-six years. What has changed is the range. We began with pre-marinated fajita meat and have since expanded into battered and breaded products, appetizers, fritters and custom formulations — 97 catalogued items across five product categories, all manufactured at our Oklahoma City facility.

What we actually do

We are a manufacturer, not a distributor and not a restaurant. Product leaves our plant frozen or vacuum-sealed and reaches operators through foodservice distributors including Sysco, US Foods, Ben E. Keith and Performance Food Group, or direct for larger accounts.

Marinated proteins

Beef and chicken fajita meat, seasoned breasts, tenderloins and thigh meat — portioned and marinated to spec.

Battered & breaded

Chicken fritters, breaded vegetables, cheese products and appetizers, IQF or bagged.

Custom formulations

Proprietary marinades and breading recipes developed for a single operator's menu.

Value-added processing

Portion control, vacuum sealing and IQF layering built around how the product gets used.

Why Oklahoma matters to us

Every item we sell is manufactured in Oklahoma. That is partly heritage and partly logistics — being centrally located lets us serve Oklahoma, Texas, Arkansas, Kansas and Missouri on short lead times, and it keeps the plant close enough to our customers that a chef can visit and watch their own product being run.

Inspection and certification

We operate under USDA Establishment Number 1926 and are FDA certified. A USDA establishment number is not a logo — it is a federal registration tied to a specific plant, and it means an inspector is present for production. You can read more on our food safety and certifications page.

The people

O'Steen Meat Specialties remains family-owned. Founders Jim, June and Rick O'Steen built the business around consistency and direct relationships, and that is still how it is run: operators talk to people who can actually change a formulation, not to a call centre.
